The Amber Lounge

This lounge serves up a tasty selection of appetizers such as Patatas Bravas (a Spanish tapa that consists of pan fried potatoes in a spicy tomato sauce) or perhaps you might try a cold hors d'oeuvre like Ceviche served in a cucumber cup.


La Luna

This restaurant boasts an incredible 360 degree panoramic view and a 24 hour schedule. Come dine on delicious international and local cuisine, there are even special diet menus. Check out the varied selections of soups, salads, sandwiches and desserts. Try something like jumbo shrimp and polenta on a bed of mixed greens with shaved parmesan and mango-pineapple chutney. Specially designed for night owls La Luna restaurant offers a Late Night Menu. There is also a coffee shop menu provided as part of room service.

Salads
*All salads served with a choice of two homemade dressings, a balsamic vinegar, fresh basil and pine nut dressing or a fresh coriander and creme fraiche dressing

  • Caramel Pork Salad ( strips of pork marinated in Soy, Ginger and Lime juice on a bed of mixed leaves and fresh herbs)

  • Shrimp Salad (Large shrimp on a salad of mixed leaves with green beans, avocado and hard boiled eggs)

  • Sun Salad (Bell pepper, Cucumber and broccoli served on a bed of mixed lettuce and topped with marinated cheese and black olives)

  • Snapper Salad (Fresh snapper fillets lightly sautéed in white wine and lime juice on a bed of mixed leaves)

  • Tortilla Soup (Mexican tomato soup served with avocado, tortilla chips, red onion, bell peppers and sour cream)

  • Gaia Casado (local dish of rice and beans, fried plantains, homemade tortillas and picadillo, served with your choice of meat stew, fish fillet in garlic-parsley butter or guacamole)

  • Chicken/Fish Burger (tender grilled chicken fillet or Red Snapper fillet served on a bed of crisp lettuce, served with fries)

  • Antipasto (combination of skewers, grilled vegetables with pesto, cheese marinated with pink peppercorns, chili marmalade and olives)

  • Shrimp Cocktail (large shrimps cooked in coconut milk and combined with avocado on top of a salad of mixed leaves and red onion rings)

  • Tomato Eggplant Terrine (Pan-fried Eggplant, layered with tomato sauce, topped with cheese and herbs)

  • Gazpacho (chilled soup garnished with tomatoes, cucumber, pepper and onion)

  • Chicken, Avocado and Papaya Salad (Marinated Chicken Strips combined with avocado and papaya, drizzled with Asian style dressing)

  • Party Salad (palm hearts combined with red onions and avocado in a tasty dressing, served on a bed of lettuce)

  • Mixed Salad (A mixed salad of fresh leaves, tomato, cucumber and red onion)



Main Courses

  • Tropical Chicken (Tender marinated chicken escalope, pan-fried and topped with tropical salsa. Served with rice and vegetables)

  • Tenderloin in Fresh Mushroom Brandy Sauce (Char-grilled Tenderloin of beef served with pureed potatoes and vegetables)

  • Garlic Fish/Shrimp (choice of fish fillet or shrimp pan-fried in garlic, parsley butter. Served with rice and vegetables)

  • Thai Curried Fish (Red Snapper Fillet served with a lightly spiced curry sauce of fresh homegrown lemongrass, fresh ginger and coconut milk. Served with rice and vegetables)

  • Macadamia Fish (Red Snapper fillets in a macadamia nut crust with a light citrus sauce. Served with rice and vegetables)

  • Baked Shrimp and Snapper (combination of red snapper and shrimp baked with avocado slices, cheese, fresh herbs and cream. Served with pureed potatoes and vegetables)

  • Mango Chicken (Chicken Breasts marinated in lime juice and coriander, pan-fried and served with grilled mango slices and drizzled with coconut-chili sauce. Served with rice and vegetables)

  • Pura Vida Chicken (tender chicken fillet, pan-fried in a creamy curry sauce with bell peppers, onions and potatoes)

  • Garlic Shrimp Pasta (light pasta dish with large shrimps and chili sautéed with fresh garlic, white wine and ginger)

  • Enchiladas (Lightly grilled eggplant with almonds and cheese, combined with a Mexican tomato sauce in a flour tortilla. Served with salad and French bread)



Desserts
